Coachmen introduced the lightweight single axle Nano series specifically for those such as yourself, selling quite a few each season, particularly the Coachmen Apex Nano 185BH which offers most of the amenities of larger trailers. Yes, the bunk beds are about as narrow as you'd want, floor space is more limited due to the less than 8' width, the dinette is a bit tight for any more than 2, the fridge isn't a full size 6+ cu ft, the main bed isn't a full queen size, and it is a single axle vs double axle trailer BUT it does have a standard roof mount A/C unit, does have a standard dry bathroom, features Azdel sidewalls, and overall is quite a nice, light weight but upscale trailer that should be a pretty good match for your tow vehicle. :)
A number of years ago, before we bought our current Coachmen couple's trailer, we looked at the R-Pod series but were turned off by the wet bath, unnecessary IMO when models like this Nano with a conventional dry bath are available. I'd also in your case avoid any trailer with a slide which will only add weight ... that 185BH Nano, which is much more upscale than the entry level Viking / Clipper versions would be a good fit for you that would avoid you having to sleep your kids outside in a tent. :B
