I towed a 12k 5er in 100*F heat through the Utah mountains and never got mine too hot with a stock pan and cooler on my 2007 Megacab with the 48re Trans. I monitored my Temps digitally via a scangauge2. Buy what you want but it's not needed.
Are you measuring temps in the pan or at the output of the torque converter?
Wherever the computer does, I'm not sure.
In my 2002 Cummins Ram, I used an analog gauge and had the sensor in the output line to the cooler. Saw 250 there once while crawling up a steep mountain grade. I could only go 20 mph due to pedestrian traffic walking and vehicles parked along the roadside. Stayed in 1st gear so the converter was unlocked. I was towing a 9000# 34' TT at that time.
