I think that truck will work for you, if you are patient folks. While under powered, the old 5.4 2V was a dependable engine. I towed a heavier trailer than you are talking about, up long, winding, 7 percent grades. It was slow going, second gear best case, and having to use 1st gear at 25 mph on occasion. I never had a cooling issue, even climbing at high temps. I would suggest a trailer loaded weight, of less than 6K.
I usually got around 8 mpg, towing, with overdrive locked out, and speed around 60 mph. Against the wind around 7 mpg at 55 mph. You see what I mean about patience. Again, I was towing closer to truck limit.
