If you're choosing a TC to get away from "crappy construction" you are going to be sorely disappointed. TCs have the same construction and quality issues as any other RV type, if not worse, and you pay more per square foot for them.
For the size of your crew and your desired living style, you will definitely be looking at the largest of TCs with multiple slides and a crew cab dually pickup. Your needs for lots of space and lots of storage are mutually exclusive to off road capability. Picture an elephant trying to squeeze through a drinking straw.
With everything you'll probably end up bringing along, you'll look like the opening sequence to the Beverly Hillbillies going down the road, not to mention accessing everything is going to be a royal pain. A small enclosed utility trailer for accessory stuff is HIGHLY recommended.
Maybe even a "hybrid" approach is in order? A midsize TC for the parents, and a utility trailer fitted out with bunks and basic living accommodations for the teens. That will give them their own space and it won't feel like they're crammed in sharing a bed with Mom & Dad. Plus the trailer gives you that much more room for solar.
