The OP has done a good job of describing the problems, now come the job of finding out why.
Battery - First I would check the amp-hour rating of the battery. Then I would monitor the phantom loads and the working loads. Also, as already mentioned, make sure your charger is fully charging your battery. Your battery may be fine but it may be too small for the TT load.
Losing water through the overflow tank - This sounds weird to say the least but if that is what is happening, as mentioned, you may have to plug or valve it when on the road. I would also fill it and leave it parked for a few days to be sure do not have a leak.
The fan problem has already accessed, it sounds like a fan switch position.
Problems with a new TT are annoying but unfortunately all to common across all the major brands.
