Add a transmission cooler. Changer your gearing if that will make you feel better. Personally, I think you are better off spending a little cash on your current truck than buying something in your price range. The 03 - 05 Cummins that you are talking about are going to have north of 200,000 miles if you are only spending $12,000.
While the mechanical side of that truck might have a lot of life left, you are going to have to search far and wide to find one that the interior isn't beat. (and I am not a Dodge basher, it is my truck of choice).
If you want to change trucks, go for it. But you are not talking about a lot of weight. Your 1500 should be just fine.
