I've currently got a '14 Ram 2500 6.4L 3.73. In the past, I've had an '07 Ram 1500 with the 5.7L 3.92, but obviously not the 8 speed in an '07. With a couple others in between them, including a 3500 6.7 Cummins.
As for stability and handling the weight, towing in crosswinds and just feeling secure, the 2500 is hands down the better tow rig than the 1500. That's expected. What was shaky in the 1500 is rock solid in the 2500.
But if power is your primary concern, it's probably not worth the cost of the upgrade. The torque comes on quicker in the 6.4L than it does in the 5.7. It's a better towing motor. It's very capable, and I love mine. Perfect for my situation. But it's still gas. You'll still downshift on the hills. It's still gonna need to rev at times. It's built to do it, but it's not a "set it and forget it" experience.
For that, you need the diesel.
