1500 to 2500 is night and day for most of what concerns you. As many others have said, if you really want to haul balls up the hills and through wind you need the diesel. But for the weight you are talking about the 6.4 is more than adequate. I haul an 8500# TT with the 6.4 Hemi with 3.73 gears and it's overall great. If you can find one get the 4.10 rear end but good luck... they are few and far between. Again, for the weight you talking the 3.73 is more than adequate.
In a nutshell you're using your current vehicle at the very upper limit of its ability which is never going to feel good. It's like going from a crappy car stereo turned to number 9 to a nice one that is on 4 to achieve the same sound level.
