2x. This makes a big difference in TC comfort, as most compartments are not insulated on the inside. Rigid insulation can be pressed into an opening like the external shower or pulled into the inner flange of a compartment opening from the inside, as multiple segment to seal the opening.
Using strapping tape on the insulation makes it easy to install if pulling or easy to remove if pressed in as shown below.
Since you are exposing the plumbing, consider adding a 3-way valve to isolate and drain the city water supply and the external shower lines.
Isolate and drain outside contacting plumbing, by turning it clockwise 90 degrees from the normal position shown below

Open valves and remove external hardware

First layer of insulation pressed in with strapping tape tabs for easy removal

2nd layer of insulation pressed in with some foam removed for latch to rotate
