I like the out of the box thinking but RVs in this case are defined as having a bathroom and kitchen so that doesn't quite work.
I think the argument is if it looks plausible that it might be an RV, they are unlikely to pull you over and check if you have a toilet in the back. With an open bed and an ATV, it's readily obvious.
Of course, it's still technically in violation of the rule, so if you do get an ambitious officer, you can still draw a ticket.
