I think the charging stations will be close to 1,000 volts. Porsche is about to release an 800v vehicle. Most are about half that right now.
Safety is not really a big deal. No power is available at either side until fully connected and locked into place. The the charger communicates with the vehicle to verify all is good and receives the charging specifications. Then while the driver goes to do something else the actual power connects and feeds the vehicle.
