In addition to camping I like woodworking. I've made some organizational improvements to my camper using woodworking skills. Some of my mods may be applicable to your camper:
Magazine rack keeps maps, magazines, newspapers etc. organized
A general idea is to divide cabinets into separate areas using shelving. Assemble the items you'd like to put in the cabinet and then determine the best spacing for the shelves to maximize capacity and organization. Here are some examples:
These dishes and glassware occupy a space of only 11"h x 13"w x 11"d. Included are 8 plates (sm, lg), 12 bowles (sm, med, lg), 4 mugs, 12 glasses (sm, med, lg), 1 measuring cup, and a small bin for spices. The two tension rods secure contents during travel.
These two pictures show a spring gate that holds flat items (griddle, cutting board, muffin pan, etc. flat against side wall of a large cabinet.
This is the same cabinet with the spring gate. I added a full extension drawer.
Here is another base cabinet with a full extension drawer. By carefully choosing pots, pans, bowles, etc that nest, a lot of stuff can be stored in a small space.
Here I added three full extension drawers under the bed. A false bottom above the drawers still gives some chest storage directly under the mattress.
