My guess is that a cargo trailer would not be well insulated. Check out the Fun Finders (although a 189 is probably too cramped for full timing). The newer Fun Finders are very well insulated -- thick foam in the walls and ceiling. But if you want real four season capability, check out the Nash or the Arctic Fox. I have also heard that the Lance trailers are well insulated -- I am not sure if that is true.
Also, you could easily add extra insulation under the trailer -- I have done that, and more can be done than what I did. You could slap on a one inch thick layer of foam board, covered with an underlayer of coroplast. This would not affect ground clearance if the trailer axle is flipped -- your ground clearance would be determined by the height of the axle above ground. And with monster tires, no problem -- you might have more clearance on the trailer than on the tow vehicle.
The only thing to watch out for is the escape angle -- if you have a big overhang in back, coming out of a deep ditch can be a problem. Some folks put skids or rollers in the back, for just such an event. With my new trailer, the back has never come within a foot of the ground, no matter how rough the terrain. But that is partly because it is so short.
