Cranking the T-bars an 1 to 1-1/2 inches is fine , any more and the CV angles are too much and will need other front end parts . It's also a good idea to use a spacer to add to shock length if they are stock .
The rear fender well are not a problem , it's the rear of the front well that's tight . On the drivers side zip tie the park cable more to the rear .
Ran one set of 285's on my 03 2500HD on stock rims .Back then they only came in D's , no E's . Never had max weight so don't know that aspect . They handled fine but did tend to wear the centers a little more because of narrow rims . They still did rub sometimes on a hard low speed turn over a bump . Decided for my use the 265's were a better fit , occasional off road .
When I had a Mazda with a torsion bar front suspension, changing the bar tension (ride height) affected the camber and toe alignment. I'm not sure how your GM steering geometry is related to height change.
