My struggles will likely disappear with any new offerings in 2500.

I’m a GM guy, but that Ford 7.3 with the 10 speed and 4.30 gears look like an awesome combination. I am also not a fan of that cylinder deactivation on the Ram, more things to go wrong.

I can't speak about the 7.3 Ford but I have a 2017 Ram with the 6.4 Hemi (6 Speed). I've had no issues with it. You won't have any problems towing your 8K trailer at all. This past winter, I towed our previous fifth wheel that weighed close to 10K loaded to Florida and back from Western NY. My only complaint and it's a minor one is it only has a 31 gallon tank so there's more frequent stops to fill up. They need to up the gas tank size some.
