That definitely gives new owners things to think about or upgrade. Posting up some pictures or a link to them will get us busy.
Mine has the Fantastic Fan in the bedroom and living room, but the cheap fan in the bathroom. Running all three creates a good draft and air exchange through the whole camper. I opted to stay away from the fancy vents with temperature and rain sensors or with remote controls - I simply protected all the vents with Aeroflo covers.
LED strip lighting is now on the awning and under the camper wings. This does help if you camp in an unlit area, so I imagine your upgrade is even better.
More counter space is always welcome. Our Arctic Fox had a counter extension you could put in place, but it was stored in the closet. It would help to see how your flip up counter extension turned out.
As for the loveseat: In 2018 models, Host made changes to the cushions (not sure about the frame) which makes it more comfortable. The leg rest is an option, otherwise you get a storage drawer under the seat.
