That camper looks like a dream.
I do have a couple of comments. First be sure that the prewire for solar is sufficient. When I dealt with Northstar as few years ago, Rex seemed to think 10 gauge wiring was OK. Second, I would reconsider the generator issue. On an even moderately warm day, the camper can cook in the afternoon sun. Running a generator and the A/C for an hour in the evening can make a HUGE difference. Somehow opening windows and running the vent fan just does not seem to do much. Also consider how much power that refrigerator is going to take. You have a big battery bank, but even so on a hot day that refrig will suck up way over 100 AH. Finally, I would not be disappointed on forgetting shelving for the storage areas. My wife and I along with the 2 cats, full timed for a couple years in a Northstar Igloo. We needed 4 seasons of clothing and everything we owned that was not in a storage locker thousands of miles away. With a bit of use you will find out what storage arrangements work for you. For clothing we opted to hang canvas closet organizers from the closet rods. I roll all of my clothing and use rubber bands. It takes an extra 5 minutes when folding laundry but the system works for me. Now that I have a house and regular closets, I am still rolling my clothing and using the canvas organizers. For the pantry, I installed wire shelves that are adjustable. The shelves hold large plastic storage drawers I found at Target. I have changed and modified the shelves and drawers several times.
