If the door is replaceable, I'd just replace the door and not disturb anything. Take the least evasive action for the results you want. If you attempt to remove the entire assembly, you'll have to disconnect the water lines, break the seal between the compartment and the outside of your camper, and could run into unforeseen problems you're not expecting at all. In this case, less is better!
Only if the door cannot be replaced, as the assembly is one whole piece, would I even remotely consider replacing it all, just for the door.
