Those Coopers ARE P tires, and any P tire can be made with a stiffer sidewall - and made as stiff as an LT LR E tire. It's a little complicated, but you are trying to draw a distinction that just isn't there. "P" has to do with the way tires are grouped for sizing purposes, not the vehicle the tires were designed to go on. P tires have been used on pickup trucks for as long as there have been pickup trucks.
Besides, what makes a tire really stiff is inflation pressure.
