I live in south east New Brunswick and spend a fair bit of time Camping I. The area.
If going to PEI, charlottetown is a great food city, many great restaurants and good biking trails are available, otherwise it’s pretty much beaches and farmland.
To get there you’ll be driving through my province, please take time to camp and visit Fundy national park, it’s one of my favourite spots and it offers amazing views, great hiking trails and good campgrounds.
Others have given you plenty of good info on NS so I don’t have much to add to that.
