In between trips is it OK to leave our refrigerator and water heater plugged in.

Yes to the refrigerator, not sure if you talking electric water heater, that would be a bit too much on a house outlet. If it is gas water heater then no problem running it.
In order to prevent any problems, we had an electrician put in a dedicated 30 amp line for our trailer.
