Yup. Do it all the time. Refrigerator is never turned off except in the extreme winter (parked at home). This year is a first! Decided to keep water in the camper while at home and been keeping the water heater on and hot! No problem.
Our camper has an outside sink and stove and I've attached a water sprayer to the hose. Our camper is parked with about 99% privacy, and I've found I completely enjoy taking showers outside ... after dark! I'm going to have some bad withdraw when weather gets colder!
Refrigerator or water heater won't hurt a thing. Just be sure with the water heater that you leave water in your fresh tank and your pump on, or attached to a garden hose. If you loose water from the water heater, it needs to be replaced. If the water source is cut off, the tank could be low on water and then you could have problems. If the water heater over heats, the pressure relief valve will blow. This will remove the pressure and water. That's why you want to make sure you still have a water source for the heater.
