In two of my campers I had to install a 12 volt fan to get the air to properly flow across the outside coils (yes outside the fridge - not inside)
For the first camper I bought a kit that had a thermostat that you clamped on the refrigeration coils, a fan, wiring and instructions on where to plug things in for around $100
For my TC, I pulled a 12volt fan out of an old computer, $5 adjustable thermostat off ebay and some old wire I had laying around.
In both cases, before the fan, the ice cream was semi-gooey. After the fan, the ice cream was rock hard. In Florida. In July.
