I replaced a leaking valterra 1/2" rubber hose with pex and sharkbites. Removed plastic factory 3 way bypass with brass sharkbite t. Now no hot water. Me thinks i messed up? Guess that vslve serves mo...

NO, he replaced it with a "T"
If a 'T' was installed then water heater is probably still empty cause water would flow up thru bypass line and back against check valve in hot outlet so very little water would flow in thru cold inlet due to check valve being closed.
Hope OP fixes with another valve before turn electric on or he'll be replacing element also.
