You have a lot of places all around you! Do a search for WMA, TWRA, TVA, and also take a look at National Forest properties. There are also paper companies around you that either allow free access or access for a small fee. Many TVA boating areas also allow camping. You can also visit Smoky Mtn National Park.
Being a little more specific, I'd visit Catoosa WMA which is divided up by gravel roads with many places suitable for truck camping.
If you are not aware of the TN area wildlife/bugs/ticks/chiggers, do some research before you walk around much!
