Your best bet is to do an individual search on the internet for each component you need info on. For example your fridge do a google search with the manufacturer name and model number plus manual and you should find an online manual for the fridge.
Wiring is pretty much hit and miss. You can use a tone generator and amplifier probe to trace the wires from one end to the other
