Look for a microwave-convection oven combo, rather than a gas range with oven.
My apartment in China had a small LPG range with oven, it was really hard to get even heating and stable temperatures. Not too bad for baking a piece of chicken, but hard to get a good pie and almost impossible to do a decent cake or custard. Not much better for baking than a countertop toaster-oven.
That one, at least, had a spark ignitor for the pilot. The one in my RV, have to stick my head in while holding a match and holding in the safety. And it is smaller. Thus I haven't tried to use it, and if I want to bake I bring along my toaster oven, which does a lousy job but is easier to use to bake something small. It also broils steaks just fine :)
A long time ago, RV gas ranges were built more like the small gas ranges we used at home. Not so today, particularly in sizes for TTs.
