Hi Marc,
I would install on the slope (in fact I did). If installing only one panel now--do it so it has the longer cable run--that way when you install #2 there won't be problems running wire to it.
There is a place in Ontario that is selling panels for around $1.09 per watt--why not go whole hog now? After all it is only about two tanks of gas.
I'm going to upgrade using Poly technology and will populate the roof. I'll have to do some careful measuring very soon.
I'm having fun lately with the solar power actually sending energy to the chassis!!! I've seen as much as 12 amps when the battery bank is full.
