My thoughts:
Keeping & using the Expy is out; you already have the notion that it won't cut it & IMO you aren't going to be happy towing a 26' TT with it. You'd be marrying a girl that you have doubts about.
I think the Eco with both max pkgs would work; probably the most comfortable option. There is/was an intercooler condensation issue; some say it's been resolved, others refute that. Just something to be aware of.
Any 3/4 or 1-ton gas truck would certainly work.
Any 3/4 or 1-ton diesel truck would certainly work, but as you stated it will cost more & overkill for a 26' TT (though some would disagree).
Now for the "if it was me" part:
I'd go 1-ton SRW crew cab 4x4 with gas.
Plenty (actually more) capability than you'll use, less initial cost than diesel, no DPF to add, no uber-sensitive fueling system (I think fuel quality is something to think about while traveling; at home you know what works and aren't subjected to way-out questionable stations).
Nothing against diesel; if you said you're buying a 38ft 5er I'd have said diesel dually, but to me your needs would be perfectly fit by a Ford, GM, or Ram 1-ton gasser.
