Have you only towed with your current truck? If so, you never noticed because your truck is heavy enough the slip angle will occur on the trailer tires instead (also, having a heavier truck means the trailer can better "find center" before the hitch settles into static friction).
When the truck is lighter then trailer, it just can't overcome the static friction of the sway control. And its not just weight, wheelbase and tire sidewall stiffness have an affect also. If the trailer were towed without the Equalizer bars in place, I'm pretty sure the steering angle would go away.
