Yeah, that sounds like the nature of older steering setups, because front ride height changes the drag-link angle. My van is the same way. If I have the motorcycle rack up front, the steering wheel is pointed right about 15-degrees, even though the van still tracks straight. If I tow without weight distribution, then it hangs out slightly to the left.
I don't think this is the same problem the OP is having. Sounds like his truck has a steering force to one side or the other (and probably wants to drift that way if he took his hands off the wheel). Friction hitches by their nature are able to hold an angle between the truck and TV, but with longer/heavier rigs the combination is better able to overcome that, either by being able to overcome static friction to line them up, or because the trailer is the one dog-tracking instead.
