My 2002 Avalanche 2500 with 8.1 tows my 10k racecar trailer with no troubles at all. Put the same trailer behind my 99 SuperDuty V10 and it's like I am towing with two dead cylinders. The V10 is strong and runs like new, but the torque of the 8.1 is far beyond that of the 6.8 V10.
My fuel economy with the 8.1 is 12 MPG hwy unloaded and 7.5-8 MPG loaded.
My fuel economy with the 6.8 is 14 MPG hwy unloaded and 9 MPG loaded.
The V10 is working very hard to pull the trailer..
As far as quality as a tow vehicle, I have never had a truck that pulled my bumper-tow trailer as well as that Avalanche.
You might be aware that the Avalanche is really a rebodied Suburban..
