Unless you are driving a lot in reverse (not common)...I would much rather have a deep granny gear in reverse. 
When I'm backing into a parking spot (non-towing), I'm usually riding the brake to keep the speed down anyway. But backing a trailer, I would rather let the gearing do the work without having to hit the accelerator (or at least just feather the accelerator a bit rather than having to punch it to get any movement).
As far as skipping 1st gear...lots of inputs on modern trucks...maybe even a bit of machine learning:
 - I'm sure most trucks have a grade sensor.
 - If a trailer is hooked up, the built in trailer brake system knows you are towing.
 - There are probably suspension sensors.
 - History since last engine start...ie: if it took a lot of torque to get moving the last start, probably need to use 1st gear the next start.
