Everybody talks about 80,000 pounds and still I see plenty of doors go up and there is hardly anything in there. I see open flatbeds empty quite frequently or some minor load. Sure many roll right at 80,000 but really I just don't see this as happening all the time.
In local delivery truck market these trucks will be for, they generally go out full and are empty on the way back unless they have any pickups. The problem here is the weight of the truck themselves. Since they weigh a lot more than their ICE counterpart, they will not be able to tow as much before hitting the max GCWR.
For most local delivery trucks this will not be much of a concern since probably 90% don't haul that much weight. Where it will be an issue is for local fluid delivery trucks since they routinely push the limits. In these applications, you will need almost two Tesla trucks to carry the same amount as one ICE truck.
