They don't trust the crossover valve and don't want to have to get up in the cold to discover they are out of propane. They choose to open one until it runs dry and then get up in the cold dark night to switch over to the spare tank. If you check your tanks you won't have a problem and will be able to sleep through the nights just fine.
I don't camp when its cold, so my propane gets little use. However I do exactly this because I don't want a leak to suck all my propane out of both tanks (on my old keystone I was chasing leaks forever).
However in the winter when I am keeping my RV warm (because I really don't live where it makes sense to winterize) I open both tanks up so it stays warm.
