the V10 gets close to the mileage of the 7,3. All in all the cost of operation will actually be lower for the v10 considering fuel is much higher for diesel.

I would go with the V10. Lower over all miles. Cheaper to fix, and as stated above close to the same fuel mileage.
I had a 2000 V10 Excursion pulling a 10,000 lb TT. Fuel mileage non towing was 11-12 in town and 13-14 on the hwy. Towing was 7-7.5 mpg. Added a SCT 5star tuner and towing went to 8-8.5 mpg. Plenty of power to tow with. Loved that truck! Would still have it if we could have towed a 5er with it.
Currently have a 2003 F350 CC SB 7.3 diesel. Our 5er is almost 10,000 lbs. and towing we get about 9-9.5 mpg. It is stock, has plenty of power to do the job. I have spent more on it in repairs in the two years we have owned it than I spent on the V10 in the 4 years we owned it.
If your really only looking at 2,000 miles a year, for sure the V10.
Good luck, John
