Wow, all the Ford lovers turned their back on the venerable 5.4 so quickly???
Any of those vehicles will be fine for what you need. The 5.4 was the staple engine in Ford's lineup for a long time. It won't be the fastest, it won't be the most fuel efficient, but for relatively low mileage towing it should be fine. It has the lowest entry price and the low mileage. Only 2000 miles a year from upstate NY, you aren't really running into too many mountains like you would out west.
The V10 is a hauling machine and will do just fine. I didn't see mileage on the V10, but they are known to be pretty stout so long as they are properly maintained.
The 7.3 diesel is a great engine, but that truck has lots of miles. 13 years and 260K miles might not be a lot to the engine, but the transmission, frame, seats, body panels, suspension, power steering, etc etc have seen a LOT of miles.
I would suggest you invest some money up front and have a trusted mechanic check out whichever vehicle you decide you want. Have them thoroughly inspect the vehicle and make your decision from there.
If it was ME and MY MONEY with only 2000 miles a year towing I would lean towards the 250 with the 5.4 engine. Make sure plugs have been changed, oil looks good and trans fluid looks good, make sure it rides ok and doesn't make any goofy noises, engine/trans/rear end feel solid.
