With that little amount of weight, you have lots of options.
I am unaware of the implications of adding a hitch to a Grand Caravan. Minivans aren't really made for towing, but I with the small weight you would be fine and within the manufacture ratings.
The 1500 is a good option. But there are folks that don't want to drive a truck. If that is you, consider an SUV/CUV. Grand Cherokee, Durango, Tahoe, many, many options for you.
