I recommend never leaving home without a full fresh water tank. Everyone is happy when you can just pull over and use the toilet that you're towing behind you. Or use water for any other reason like washing and drinking. I read about not traveling with a full fresh water tank to save weight, but don't think a few hundred pounds in the trailer makes any noticeable difference. Your mileage will not change, it will remain lousy.
I also travel with the fridge on so food stays cold. Impromptu stops will happen, it's nice to be prepared.
