Sounds like you like dual slide bunkhouse units. typically these units are 32' or longer and weigh 8K-11k loaded. I suggest a F-350/1 ton truck or equivalent.
Skip the 250's you may want the additional payload of the 350.

Not sure if there are any large RV shows in your area, but go check out the units. Determine which floor plan fits you best. Compare tank capacity,storage capacity. Loaded weight, unloaded weight,Cargo capacity etc.
Picking an RV is fun however there is a lot to consider.The size of the trailer will determine the size of the truck required be sure to sync the them.
