It is always hard making the decision. Our rule had always been to never buy a camper that did not have enough beds for everyone without using the table or sofas. That said, if we were in your current situation we would open the couch or where ever the little one is to sleep so we would not have to move her. Camping is an outside activity so we are outside from morning coffee to bedtime.
We do not have a big living area as we don't us it much. If it rains we have a couch and table and don't need anything else. We have a bunkhouse with a full outside kitchen. Our 19 yo uses the bunkhouse and I love the outside kitchen, best thing ever added to a trailer.
Do what you think is best whether is is wait a year or two or get something that you will not have to change again in a year or two. I know it is easier said than done though. Good luck.
