I've got 2 adults, and will soon have 3 small kids. Total passengers is 500#, which leaves me with 1500# available for TW on the 8.1L, or 900# with the DuraBurb conversion. My dry tongue weight is 900#, so I would be RIGHT at the limit with the DuraBurb.
1) I would double check that receiver info. I just don't see how that's possible since the new burb's have a boxed frame with crumple zone and an integrated cross-memeber that forms the receiver.
2) If the "DRY" weight would put you at your limits, then even your trailer 100% empty will put you over. Even batteries and propane tanks are not included in the published "dry" weight. I've seen actual empty weights anywhere from 50% to 100% more than the published dry weight.
