Sketchy input from the OP.
The OP trailers shows to have a 5280 lb dry...1520 lb CCC...6800 GVWR. This is a lightweight trailer.
The '20 chevy 5.3 has 355 hp and 383 torque with the 10 speed tranny and 3.23 gears. Plenty of truck for this size trailer. Sway and squat issues with this combo is with the wrong WD set up. No need for lower gears and especially no need a one ton truck pulling a 5k-6k lb TT.:R
Higher speeds and higher engine rpm can lead to poor mpgs.
I use a Husky Centerline TS WD hitch with 1200 lb bars on the wifes '16 1500 4wd chevy. With around 1060-1100 lb hitch loads and proper WD set up the combo pulls like its on rails. I use scaled front and rear axle weights plus before and after measurement with a yo yo to keep the trucks front at OEM height and w/i one inch height at the rear.
I've used my 2500 '03 2500 Dodge/Cummins NV5600 pulling the same loaded trailer to the same locations and it will average 15 -15.3 mpg going out 270 miles and return trip.
If you want a 3/4 ton diesel truck then I would get one. I would choose the white one. :)
