If a highwall is anything like a tent trailer I personally wouldn't go that route. We had a nice tent trailer for about 4 years and every time we had to set that up in the rain (or high wind) I swore it was going. We enjoyed the ease of towing it for sure, but it was not without it's draw backs. We went to a TT back in the mid-80's and have stayed with that type of unit ever since.
I don't think any trailer is perfect. they ALL have their "drawbacks".
On a nice summer night with all the screens open on my pup looking at stars and listening to nature then seeing the sunrise in the morning, to me stuck in a solid side 4 wall trailer is a huge drawback to my camping.
I have camped over 100 nights in the past few years and have set up in the rain once.
To the OP, a Highwall will be slightly above your envoy but I can't see any issues with towing one. They are just as heavy though so don't expect a huge power gain. The I6 has a bunch of torque. I am surprised you are not happy with its performance. As has been said slow is the key. 55-65mph is your range and you should always have good power.
As far as fuel eco....forget about it.it is still going to suck
