Increasing the size of your tow vehicle is not exclusively about the size of the engine. The vehicle's suspension and frame have to be adequate to handle the forces involved, also. With the weight you're anticipating to tow, a 3/4 ton crew cab is the best suggestion. You would give up a few miles per gallon vs a 1/2 ton but the difference for average driving mileage is not that significant.
