Is your truck a 2WD or 4WD?
My truck used to do that too. The steering wheel would be down to the right. When I put a new hitch on my Excursion I reset the hitch and the steering wheel is now straight. The reason is because with a solid front axle and a track bar it was unloading the front end causing the axle to move with the track bar. So you would have to counter steer to bring it back to driving straight. I know it sounds odd, but if you know how the front suspension geometry works you understand! I think you will find nothing wrong.
