I've towed a 1600lb (dry) pop up for years with a Outback and a 1999 Legacy. The Legacy struggled with the kids and bags, the Outback does well.
I will also say that I am very familiar with I-90 and I-5 into Washington. I-5 is far flatter but more boring. The Columbia River gorge however is a fantastic area.
