I am very happy with my Tacoma -- trailer weighs under 3000 with a lot of gear. It'll go up very steep hills and come down safely. I usually drive around 60 mph -- Calif limit for towing is 55 mph. I never try to pass while towing.
Up a long grade (for example, the Grapevine on I-5 near Bakersfield), I can still keep it at 55. It'll approach 4000 rpm under those conditions. While cruising, I am usually around 2000 rpm. With a strong headwind, it'll be at 2500 rpm.
And -- here is the best part -- this truck is my daily commuting vehicle, and I get over 22 mpg on LA freeways, with very careful gas pedal technique.
