Trailer novice here, can you help me plug in my TT?

You only need the 30 amp power cord that goes from the TT to a 30 amp receptacle. If you want to plug a 30 amp TT into a 15 amp receptacle then you need the adapter. The cord should have come with your TT as you need it to get 30 amps.
