I'm sure posting someone's conclusion on a 2002 truck is entirely applicable to the OP's 2011 or newer truck! Just like posting supposed temp ranges for transmission fluids from decades ago is a great thing to rely on! Things change, people.
Re: transmission temp gauge, his truck (likely) has 2 readouts. The analog gauge isn't great, but it also has a digital readout that is spot on. No reason not to rely on it.
Re: trans temp, the OP has nothing to worry about. We've pulled a few long hills out here in Utah with my Ecoboost. The temp goes up to 215* or 220* maybe, but that is about it. Well within the safe operating range. On flat ground it stays around 200*. Unloaded, my truck is always around 195*, so that cooler works pretty well when towing.
In short, the truck will let you know if there is a problem.
